Elections & Chocolate Truffles

This morning Dad, Mom, Fallon, and Douglas went out at 6:00 a.m. to cast their votes. You would think that going early would let you escape the after work crowd of voters. The lines stretched all the way down the side walks and inside the building, lines zigzagged everywhere. They had to wait in line for almost two hours before they were finally able to vote. Dad says that he has never seen anything like it before.

Because I was looking for a good excuse to make some truffles, I figured that the elections were as good a reason as any.



~ Simply Sensational Truffles ~

Ingredients
2-1/2 pkg. (20 squares) BAKER'S Semi-Sweet Chocolate, divided
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened

Instructions

MELT 8 chocolate squares. Beat cream cheese with mixer until creamy. Blend in melted chocolate. Refrigerate until firm.

SHAPE into 36 balls. Place on waxed paper-covered baking sheet.

MELT remaining chocolate. Use fork to dip truffles; return to baking sheet. Decorate, then refrigerate 1 hour.

Instead of dipping them in melted chocolate, you can also roll them in powdered sugar.

They are a little messy to make, but they are delicious!
